Great recipe to use up the left over fajita “fix-ns” from the previous night. 5 net carbs per serving.

Ingredients
  • 2 eggs
  • 2 ounces Sliced fajita chicken
  • 1 tablespoons sautéed peppers and onions
  • 1 ounce Shredded Cheddar
  • 1 tablespoon butter
  • 2 tablespoons salsa
  • 1 tablespoon sour cream
Instructions
  1. Heat butter in a nonstick skillet over medium heat
  2. Pour in beaten eggs; tilt the pan to spread the egg to cover bottom of the pan evenly. Lightly sprinkle with salt and pepper; let cook until the egg starts to set but is still moist.
  3. Arrange the chicken slices down the center of the omelet and top with the pepper and onion mixture.
  4. Sprinkle the cheese over the peppers.
  5. Let cook until the egg looks set, remove omelet from pan using spatula

Fast Low Carb Fish Tacos on Romaine “Shells”
Ingredients
  • 1 pound of Cod
  • 2 cups of Cheese
  • 2 Packets of <A title=”Sazón Goya Low Carb Seasoning” href=”http://carbstation.com/sazon-goya-low-carb-seasoning/2011/04/10/” data-mce-href=”http://carbstation.com/sazon-goya-low-carb-seasoning/2011/04/10/”>Sazon Goya Seasoning</A>
  • 2 Tablespoons of Lime Juice
  • 2 cups of Shredded Cabbage
  • 1 cup of Sour Cream
  • 1 Tablespoon of Olive Oil
  • 1 Head of Romaine
  • 1/2 cup of Taco Sauce
Instructions
  1. Pan fry cod in olive oil, break up (or cut) cod into small pieces as it cooks. Approximate cook time is 10 minutes on medium high
  2. Add lime and seasoning to cod, mix well and cook an additional 5 minuteson medium
  3. Go through romaine and pick out the best pieces for “taco shells”
  4. Spoon fish, cheese, cabbage, taco sauce and sour cream onto romaine
Serving size: 2 tacos Carbohydrates: 8 Fiber: 4
Notes

Experiment with other fish as well, tougher fish is typically better asit holds up and provides a little more substance.
In the absense&nbsp;of Sazon Goya seasoning, you can use packet taco seasoning, look at the carbs though!
Try additional low carb toppings such as black olives and onions
